Introduction

Good for doing Breakfast for Dinner. Good for doing Breakfast for Dinner.
Number of Servings: 2

Ingredients

    4 large eggs
    4 tbsp. salsa
    2 tbsp. sour cream
    1/2 cup shredded cheddar cheese
    2 6" flour tortillas
    4 slices cooked bacon
    Salt, pepper to taste.

Tips

You don't have to add the salsa directly to the eggs, but I like mine warmed up rather than dumped cold onto finished product.


Directions

1. Cook bacon and set aside.
2. Scramble eggs in non-stick pan, seasoning with salt/pepper to taste.
3. When eggs almost finished, lower heat and add salsa and cheddar to pan, mix gently.
4. Place half of mixture on each tortilla, top each with 1 tbsp. sour cream and 2 strips of bacon.
5. Roll up and serve.

Serving Size: Makes 2 Breakfast Burritos, Serves 2
