Introduction
Low Carb Chili Low Carb ChiliNumber of Servings: 16
Ingredients
-
2lb - Steak (can be any type you desire),
16oz - Smoked sausage (I like to use jalapeño flavor)
1 - Green pepper
1 - Red pepper
1 - Onion
1tbsp - Olive oil
3 14oz - Petite diced tomatoes
2pg - McCormick Chili seasoning (I like tex-mex flavor)
1tbsp - Chili powder*
1tbsp - Garlic powder*
1tbsp - cayenne pepper powder*
* spices are estimated amounts, I add for desired flavor... you know what you like
Directions
Simple and easy... if you didn't purchase stew meat that is already cubed, then start cubing the steak to desired size.
Throw it in a heated 5qt pot w/oil and brown, use garlic and chili powder (desired amount) to flavor steak.
Slice smoked sausage and add to pot once the steak is browned.
Dice green peppers, red peppers, and onion. Add the petite diced tomatoes, McCormick chilli seasoning mix and if any remaining spices dump them in if you so choose.
Only use desired amount of cayenne pepper for spice. Can be substituted or increased for level of spicefulness (my word).
Basically it just something I like to throw together... you will have to experiment and add for your taste buds.

This is a GREAT recipe! It is almost identical to the chili I have perfected over years of experimenting, except peppers instead of beans for a low carb option. The super secret to OUTSANDING chili...add a dash of cinamon to this, a bit of liquid smoke, and Wors. sauce. MARVELOUS! great for crockpot - 3/11/08
