Introduction

Ingredients

    4 flounder filets
    1/2 can of chopped spinach
    1/2 jar of Classico Light Asiago Romano Alfredo
    1/2 a medium red pepper
    1/2 vidalia onion

Tips

If you want to make your own sauce, you can use this recipe in combination with your own sauce. And any white fish would work well in this recipe, it doesn't have to be flounder.


Directions

Spray large pan with fat free cooking spray.
Place four filets in pan on medium heat and cover.
Chop up 1/2 a red pepper and 1/2 an onion (more or less as desired).
Saute' the onion and red pepper in a small pan.
In a bowl, mix Alfredo sauce with spinach.
When the fish is nearly done cooking, spoon Alfredo-spinach mixture on top of the filets and then add the sauteed onion and pepper.
Cover again and cook for about 10 to 15 minutes on low heat.
Serve and enjoy.
