Introduction

This salad is light and absolutely delicious. This salad is light and absolutely delicious.
Number of Servings: 4

Ingredients

    1 clove garlic, slivered
    4 Tbsp light olive oil
    4 slices turkey bacon
    2 eggs
    2 Tbsp balsamic vinegar
    2 Tbsp grated Parmesan cheese
    1/4 tsp salt
    10 oz fresh spinach (washed and torn into bite-size pieces)

Directions

Put garlic and oil in bowl and let stand for 45 minutes. Fry bacon until crisp. Drain on paper towels. Crumble bacon.

Put eggs in small saucepan. Cover with water 1" higher than eggs. Bring rapidly to boil. Take pan off heat and let stand 20 minutes to hard-boiled eggs. Drain and run under cold water. Peel eggs and chop coarsely.

Combine balsamic vinegar, cheese and salt in bowl. Discard garlic from oil. Whisk oil into bowl in a thin stream ( or using food processor, with machine running, add oil in thin stream).

Toss spinach with dressing from Step Three in town until well coated. Dived between 4 salad plates, spinkle eggs over spinach. Sprinkle bacon over all.
