Ingredients

    1 cup panko bread crumbs
    1/4 C flour
    4 sprigs fresh thyme, leaves only
    Salt
    Pepper
    1 garlic clove, finely minced
    2 T butter or Earth Balance, melted
    4 Gardein Chick'n Scallopini
    4 slices LightLife vegetarian ham
    1/2 C gruyere cheese or non-dairy cheese (Swiss flavored), shredded

Tips

The breading and concept was inspired by Tyler Florence's chicken cordon bleu recipe. Great cook!!

When slicing the cutlet, be extremely careful. It is difficult to cut the frozen cutlet, yet you need the firmness of a somewhat frozen cutlet. I use a chef's knife.

Feel free to experiment with meat and cheese substitute brands...and please post any varieties. Enjoy!

Recipe nutrition is calculated without salt content. Also, not all breading is used. Actual calories may be lower depending on the thickness of your breading.


Directions

Preheat oven to 350 degrees.
Very carefully, slice chick'n cutlet in half (across the flat side). Again, be careful! You will need a sharp knife and patience.
Cut or tear vegetarian ham slice to match the cutlet shape. Place on top of bottom half of cutlet.
Sprinkle cheese or cheese substitute on top of ham. Top with other half of the cutlet.
Place in fridge while preparing breading.
Mix together flour, salt and pepper.
Mix in all other breading ingredients (panko, thyme, garlic, melted butter).
Beat two eggs in separate bowl.
Coat cutlet in egg.
Coat egg-covered cutlet with breading mixture.
Place in greased baking pan.
Bake for approximately 30 minutes or until browned.
Remove from oven and enjoy!
