Ingredients

    2 eggs
    1 3/4 cups unsweetened almond or soy milk
    1/4 cup unsweetened applesauce
    1 cup pumpkin puree
    1 cups whole wheat flour
    15 oz can of great northern beans
    2 tbs splenda
    2 tbsp baking powder
    1 tsp baking soda
    1tsp salt
    1 tsp cinnamon
    1 tsp pumpkin pie spice

Directions

Mash the beans into a puree
Mix eggs, milk, applesauce, pumpkin and mashed beans.
Add dry ingredients and mix well.

Serving Size: makes 8 hearty pankcakes
