Introduction

Very healthy and hearty recipe and with the addition of the brown rice, a complete vegetarian meal. Seasonings can be adjusted to taste. Ingredients

    2 cups beef broth
    2 cups tomato sauce
    2 cups lentils (either cooked from dry or canned)
    1 tbsp canola oil
    2 cups chopped onion
    1 cup chopped carrot
    1.5 cups cooked brown rice
    2 tsp Worcestershire sauce (more or less to taste)
    2 tsp garlic powder
    2 tsp roasted pepper seasoning (or your choice)
    dash of red pepper flakes
    salt and pepper to taste

Tips

Optional: Add hot sauce to taste


Directions

Either saute onion and carrot in canola oil until soft or roast vegetables after tossing in oil. Combine broth, tomato sauce, lentils, vegetables, seasonings (including Worcestershire sauce) and heat through. Put half (or all if you like a smoother soup) of this mixture into a blender or use an immersion blender. Add rice and heat through.
