Ingredients
Shrimp, cooked, 16 oz
Onions, raw, 1 cup, chopped
Mushrooms, cooked, 3 cup pieces
2 cloves of garlic Chopped or Minced
Spinach, fresh, 2 package (10 oz)
1/4 cup of White Cooking wine
Wild Rice, 1 cup
White Rice, long grain, 2 cup
Egg substitute, liquid (Egg Beaters), .5 cup
Egg, fresh, 2 large
Cheddar Cheese, 1.5 cup, shredded
Green Onion/Scallions .50 cups chopped
Tips
may sprinkle with Parmesan cheese
Directions
Cook Wild Rice, 1 cup and White Rice, long grain, 2 cup as directed on package meanwhile
Saute
Onions, raw, 1 cup, chopped 2 cloves of garlic Chopped or Minced with Mushrooms, 3 cup slliced then add Shrimp, cooked, 16 oz
add 1/4 cup of White Cooking wine to sauted mixture next add Spinach, fresh, 2 package (10 oz) simmer while mixing together Egg substitute, liquid (Egg Beaters), .5 cup
Egg, fresh, 2 large
Cheddar Cheese, 1cup, shredded (set aside .5 cup of shredded Cheddar Cheese)
Next in mix in large bowl cooked rice, sauted mixture and egg mixture together transfer to casserole baking dish top with remaining .50 cups of cheese and .50 cups of chopped green onion then bake at 350* for 20-30 minutes Serving sizes are one cup should make about 9 cups/servings
