Introduction
Low calorie, smooth vegetable soup using lentils. Low calorie, smooth vegetable soup using lentils.Number of Servings: 6
Ingredients

1/2 Tbsp Olive oil
Crushed Garlic
Red Pepper Flakes
1 Lg Onion - chopped
3 stalks celery - chopped
3 Med Carrots - chopped
2 Knorr Ham stock cubes
1 1/4 cup Red Lentils
Water (approx 4cups)
2 Bay leaves
Salt & Pepper
Directions
Heat Oil in large pan.
Add crushed garlic and red pepper flakes. Season with salt and pepper.
Add Chopped Vegetables and cook until slightly soft.
Add water to cover vegetables - approx 4 cups.
Ad Stock cubes and bay leaves.
Bring to boil.
Lower heat and add Red Lentils.
Cover and simmer for approx 45 mins. Stir occasionally to prevent lentils from sticking to bottom of pot.
Season with pepper as required.
When Veggies are soft and lentils are cooked, blend using a hand blender.
I like to leave some chunks of vegetables for texture.
