Introduction

Number of Servings: 30

Ingredients

    2 cups pitted dates
    1/4 cup water
    4 Tbsp cocoa powder
    1 tsp molasses
    1 tsp vanilla extract
    1/4 cup boiling water
    1 Tbsp almond butter (peanut butter will do)
    1/2 tsp cider vinegar
    1/2 cup chopped pecans

Directions

In a medium saucepan, combine dates and 1/4 cup of water and simmer, covered, for 8 minutes. Puree the dates in a food processor or blender and then add the cocoa, molasses, vanilla, boiling water, nut butter and vinegar. Put the mixture into a medium bowl and stir in chopped pecans. Chill the dough for about 1 hour or until it can be easily handled.

With moistened hands, shape the dough into balls the size of small walnuts. Arrange the balls in a wax paper-lined pan. Cover the pan and chill or freeze the balls until serving time.
