Ingredients

6 Tbsp apple sauce, 6 Tbsp coconut oil, 2 egg susbtitutes, 1 c plant milk, 2.5 c flour, 2.5 tsp baking powder, 0.25 tsp baking soda,0.25 tsp salt, sprinkle of cinnamon
Tips
Instead of using whole wheat flour I used ground oatmeal for the 2 cups and only 1/2 c of white unbleached flour.
Directions
Mix the wet ingredients together, add the egg replacer (I used Ener-G, but one can also very well use flax meal; 2 Tbsp + 6 Tbsp water), add the dry ingredients, don't overmix! Fill in muffin tins and bake at 350 F for 20 minutes.
