    1 cup flour
    1 cup packd brown sugar
    1/4 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    1 tsp cinnamon
    1/4 tsp. ground cloves
    1/2 tsp. ground nutmet
    2 eggs
    1/2 cup milk (can use skim, if desired)
    1/3 cup shortening
    1 cup pumpkin
    1 additional cup flour
    nuts raison or other chopped dried fruit, as desired


This also makes muffins (bake for 20 minutes). Remove from pans immediately and let cool on cooling rack. Freezes beautifully.


mix 1 cup of flour and all dry incrediants together. Add pumpkin, egss, shortening and milk. Mix with electric mixer. Mix in second cup of flour. When well mixed stir in walnuts and/or raisins if desired. Pour into greased, floured loaf pan. Bake for 50-60 minutes in 350 degree oven.
