Ingredients

    4 eggs (or 1 c. Egg Beaters)
    2 c. granulated sugar
    2 c. canned pumpkin (16 oz can)
    1/2 c. canola oil (we prefer olive oil)
    1/2 c. applesauce (substitute for oil)
    2 c . whole wheat four
    2 tsp. baking powder
    2 tsp. ground cinnamon
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. ground ginger
    1/4 tsp. ground cloves

Directions

Heat oven to 350 degrees and grease a jelly roll pan (15.5"x10.5"x1"). Beat eggs, sugar, pumpkinn, oil, and applesauce. Stir in flour, baking powder, cinnamon, backing soda, salt, ginger and cloves. Pour batter into pan and bake 25-30 minutes or until light brown; cool. We like them plain or you can frost them with a cream cheese frosting. Cut into 2"x1.5" bars. Refrigerate any remaining bars. Makes 49 bars.
