Ingredients
2 Cups Kellogg's All-Bran Cereal, Original
1/2 cup dark molasses
1 1/2 cup skim milk
1 large egg, beaten
1/5 cup all-purpose flour
1/4 cup whole wheat flour
1/4 cup soy flour
1 tsp baking soda
1/2 tsp salt
Tips
If batter seems too dry, add 1/4 cup more milk. For added flavor, fiber, and natural sweetness, add dates or raisins. For raisins, rehydrate 1/2 cup in warm water while bran mixture is resting. For dates, use 1/2 cup chopped dates. Add dates and 1/3 cup water to a small saucepan and bring to a boil. Remove from heat, allowing dates to cool for 15 minutes. The date mixture will add moisture to the batter. Do not add more milk! You may need to add 2 to 5 minutes to the cook time with dates.
Directions
Preheat oven to 375 degrees.
Combine the first 3 ingredients in a mixing bowl. Let stand for 15 minutes.
Add the beaten egg and mix well.
Combine the remaining dry ingredients and stir/sift together. Add to the wet mixture and mix well.
Fill 12 muffin cups 2/3 to 3/4 full and bake for 20 minutes.
