Introduction

Spaghetti squash as a great substitute to standard spaghetti pasta. Surprisingly good and surprisingly filling. Spaghetti squash as a great substitute to standard spaghetti pasta. Surprisingly good and surprisingly filling.

Ingredients

    2 lbs. Spaghetti Squash (this is 2 lbs. without the peel and seeds, so you will probably need a 2 1/2 lb. full squash)
    1 jar Chunky Ragu Roasted Red Pepper & Onions (or your favorite variety)
    1 lb. Ground beef, lean
    1 Onion
    2 cloves Garlic
    Italian Seasoning

Directions

Cook squash - Cut in half lengthwise. Place cut side up in pan with 1/4" of water. Cover and cook for 30 minutes at 400 degrees (F).
Brown meat with garlic, oninos, and Italian seasoning.
Pour in jar of pasta sauce and let simmer as squash cooks.
When squash is cooked, remove from oven, being careful not to slosh the hot water. Uncover slowly as steam will escape.
Scrape fork lengthwise down squash to release spaghetti-like strands. (If your squash doesn't come out in starnds, don't worry, it'll still be super-yummy.)
Mix squash into sauce and serve.
