This soup is vegan and is additive free, nightshade free, lactose-free, gluten free, soy free, wheat free and citrus free. Ingredients

1.5 cups lentils (or 4.5 cups cooked), any color
4 cloves garlic, minced
1 medium onion, chopped
1 extra large carrot (or 2 medium), chopped
2 tbs. cumin
2.5 Tb. sesame, sunflower, coconut or olive oil
6 Tbs. chopped green onions or chives.
Directions
Heat pan with oil. Add chopped vegetables, except the green onions and salt to taste. Once onions are translucent, add cumin (retain some) and stir for another minute or so. Then add lentils and water or vegetable stock and lentils (if you are not vegan/vegetarian, you can add organic, free range meat stock). Cook for 25-60 minutes (green lentils take longer, red lentils shorter). Add more green onions, remaining cumin and salt to taste.
Remove half the soup and blend in a blender, with a handstick or in a food processor. Return to pot. Enjoy sprinkled with green onion leaves and sea salt.
