Ingredients

    400 g canned pumpkin
    1/4 cup half and half
    1 cup Splenda
    1/2 cup coconut flour
    2 eggs
    2 tsp cinnamon
    1 tsp cloves
    1 tsp ginger

Tips

Add more sugar or less spice, to taste. If the mixture seems "gloppy," add more half-and-half. The texture unbaked should be roughly like that of cooked pumpkin pie filling.


Directions

1. Lightly beat eggs
2. Mix all wet ingredients
3. Combine all dry ingredients
4. Add liquid to dry ingredients and mix thoroughly
5. Bake at 350 degrees for roughly 35 minutes
