Introduction

I was reading a no bake "energy ball" recipe and decided to change a few things and came up with this which turned out to taste like a buckeye treat. With NO BUTTER, AND NO POWDERED SUGAR. Ingredients

    1 cup dry oats
    1/3 cup almonds raw
    1/3 cup cashews raw
    1/2 cup skippy natural peanut butter
    1/3 cup honey
    1/4 cup ground flax meal
    1 tsp vanilla
    12 oz of chocolate chips


Tips

this does have a little crunch with the nuts, but you could chop the nuts even finer if you wanted. I LOVE them.


Directions

put the almonds and cashews in a food processor and chop super fine. in large bowl mix the oats, chopped nuts, flax meal, peanut butter, vanilla, and honey well. This can take a bit to do. Then let it set in fridge for about 1/2 hour and then form into 1" balls. Put back in fridge (mine was overnight) then melt the chocolate chips on a double boiler (a large stock pot with some water, and put a bowl that can sit on the top of it, and bring water to boil so that the chocolate can melt) then dip the balls into the chocolate one at a time, and place on a sheet of wax paper or parchment paper till chocolate sets back up. Then store in fridge.

Serving Size: makes about 25 - 1" balls
