Ingredients

Turkey, Ground turkey, 93% lean, 8 oz
Laughing Cow Garlic & Herb Cheese (Serving = 1 wedge), 2 serving
Yogurt, plain, low fat, .25 cup (8 fl oz)
Butter, salted, 1 tbsp
Bird's Eye Normandy Blend, 1 cup, chopped
Cauliflower, raw, .5 head, large (6-7" dia)
Green Peppers (bell peppers), .25 cup, strips
Onions, raw, .25 cup, chopped
Kraft 2% Shredded Cheddar Cheese, .5 cup
Directions
Prepare Cauliflower
1. Cook cauliflower until tender (Microwave cover with NO water added for approx 6 minutes on high).
2. Preheat oven to 400F.
3. Process cauliflower until smooth with food processor. Add in yogurt, Laughing Cow, and butter and process until creamy smooth.
Prepare Meat:
1. Saute onions and green peppers until tender. Add other vegetables according to cooking time.
2. Add ground turkey and cook until no longer pink. Add salt, pepper to taste. Add Worcestershire sauce and beef broth if desired (just enough to keep moist).
Final Prep:
1. Spread ground turkey mixture in baking dish (sprayed with cooking spray). Distribute cauliflower mixture on top.
2. Cook in 400 degree oven until bubbling and brown (about 30 minutes). Add cheese on top and broil for last few minutes if desired to brown.
