Number of Servings: 10

Ingredients

    3-4 potatoes, peeled and cubed
    1 cup water
    1/4 cup all purpose flour
    1 garlic clove (or 1 TBLS of minced garlic)
    2 cans of fat free chicken broth
    1 cup of cheddar cheese- cubed or shredded
    1 cup of skim mozzarella cheese- cubed or shredded
    1 TSP crushed red pepper
    1 TSP onion powder
    salt and pepper to taste
    (optional) a pinch of curry

Directions

mix all ingredients into a slow cooker (crock pot). Cook for 3-4 hours on high, 6-8 hours on low. Enjoy!

*** the cooking time can vary greatly with slow cookers, if you are unsure and can not watch it, start out on the slow setting- you can always turn it on high later :)

Makes 10 3/4 cup servings

    This was the worse recipe...I thew it out as soon as it was done and had to go too the store and make real potatoe and cheese soup. The cheese from the recipe stuck to my crockpot and the potatoes did not cook very well. I was mortified when i saw the soup after it was finished. - 11/7/10
