Ingredients

    2 whole chicken breasts, divided into 4 pieces about 4 ozs. each
    1 cup ketchup (can used reduced sugar)
    1 can diet soda (dark soda, like root beer or cola works best)
    salt
    pepper

Directions

Lightly spray baking pan with cooking spray. Place 4 chicken breast pieces into pan. Lightly salt and pepper. In separate bowl, combine ketchup and diet soda. Pour over chicken. Put uncovered pan into pre-heated, 350 degree oven. Bake 50 to 60 minutes, or until done.

This is a very easy dish. The sauce mixture will cook down, coating the meat with a thick, savory sauce. It's really good and great on calories.

    We call it coca cola chicken, add some red pepper flakes & it gives it some sass. Chicken is moist & it's low calories - 7/26/08
