Introduction

Number of Servings: 8

Ingredients

    3 cans of black beans, rinsed in a collander under cold water for five minutes

    2 cans of yellow hominy, rinsed in a collander under cold water for a minute or two

    28 ounce can of crushed tomatoes

    5 cups of water

    .5 cup chopped red bell pepper

    .5 cup chopped onion

    1 tablespoon e.v.o.o.

    1 tbsp each-garlic powder, onion powder, cumin powder, chilli powder, paprika, dry basil, dry cilantro

    1 tsp salt (optional)

    .25 cup sugar (optional)

Directions

In a large soup pot, heat olive oil and sautee onions and peppers for about 3 minutes. Add the water, tomatoes, beans, hominy, and all the seasonings(including salt and sugar if desired). Stir well, and often, cooking over medium heat for about an hour and 15 minutes, or until the hominy is soft.

Serving Size: Makes about 8 one cup servings(may be underestimated)

    Note the typo - 28 oz. can of crushed tomatoes...and later One 28 oz. can. It's just the one, tomatoes - no 28 oz. can of something ELSE, and you don't throw the can itself in! And this is REEEEEEEEAAALLLLYYYY TASTYYYY! - 11/17/12
