Ingredients

    2 sweet potatoes
    2 tablespoons honey
    4 eggs
    1 teaspoon pumpkin spice

Tips

we put whipped cream on it so technically it isn't "Paleo" then but it was a good low carb/paleo version. I think that next time I might try agave nectar. It is not super sweet so I might add a little more honey or try the nectar.


Directions

Cook sweet potatoes and scoop out the soft parts put it into a food processor or blender. Allow it to cool a bit, I waited until it was no longer steaming. Preheat the oven to 350. Put the rest of the ingredients into the food processor. Pulse or blend until smooth. Mine made enough for 6 one cup servings in ramekins. Boil some water (not sure this is necessary) put it into the bottom of a cooking dish that can hold your ramekins (making a water bath). Cook for 25 - 30
