Ingredients

1kg Chicken Breasts (boneless, skinless and trimmed)
450 gr Tomato sauce packet (your own preference)
50 gr grated Mozzarella
50 gr grated mature Cheddar(or other strong cheese)
15 gr Parmesan (or equivalent)
2 garlic cloves (or garlic puree)
Croutons (I prefer a mix of plain and garlic/herb)
1 tsp Olive oil
Black pepper
Tips
I re-use left overs by slicing the chicken for salad or sandwiches and by frying the the sauce, cheese and croutons together into a mush/paste and serving as a side/sauce. Sounds dreadful but tastes wonderful
Directions
Preheat oven to 200 degrees
Trim the chicken breasts of all fat and sinew and cut in half (across the width).
In a large shallow roasting dish (glass/ceramic) add the crushed garlic(puree) and oil. Spread it around the whole base. Place the chicken in the dish and cover with the tomato sauce, making sure that the sauce covers all of the chicken.
Sprinkle half of the mozzarella and cheddar evenly over the chicken, next add a layer of croutons evenly spread over the dish. Finally add another layer using the remainder of the cheese. Top off with the parmesan and some black pepper.
Place in the oven and bake for 25 to 30 minutes(depends upon how large the chicken breasts are).
