Ingredients

    8 dried tomato halves, not oil packed
    1 small onion, diced
    2 T olive oil
    2 C chicken broth
    3 roasted red bell peppers, seeds and skins removed
    2 fresh roma tomatoes, seeds removed

Directions

Rehydrate dried tomatoes in warm water for 1 hour. Sweat the onion in olive oil about 10 minutes, do not brown. Add broth, rehydrated tomatoes, roasted peppers, and fresh tomatoes. Bring to boil; reduce heat and simmer 10 minutes. Process with immersion blender or blender until smooth and season to taste.

Serving Size: makes 8 1-cup servings
