Ingredients

    1 lb boneless chicken breasts (or thighs)
    1 medium onion chopped
    2 medium sweet potatoes chopped
    2 apples chopped
    3/4 cup cranberries
    2 tbsp olive oil
    3 tbsp 100% pure maple syrup (not breakfast syrup)
    1 tbsp pumpkin pie spice
    dash of nutmeg
    salt and pepper to taste

Tips

I usually double everything but the cranberries, which would serve 5 people with lots of leftovers. The number of potatoes I use depends on their size.


Directions

Coat the bottom of the crock with the olive oil.

Plop your chicken on top of it.

Add the maple syrup and spices to the crock.

Peel the sweet potatoes and apples and chop them into bite-sized pieces. Chop the onion.

Add the sweet potato, apple, onion and cranberries to the crockpot. Cook on LOW for 4-5 hours, and then using a large spoon, mix well. Continue cooking on low for another 30 minutes or until the chicken is completely cooked.
