Ingredients

    Lentils 1 c dry - but precook them
    Rice brown 1 c dry
    1 can diced tomatoes low sodium
    Garlic .25c
    Ginger crushed .25c
    onion .25c
    cumin ground 1 Tbl
    Olive oil 1 Tbl

Directions

Saute onion, ginger and garlic. Add tomatoes and cooked lentils and enough water to cover. Simmer 20 minutes and serve over rice.

Serving Size: Makes 6 serviings
