Ingredients

4 beef rib bones
(from large-end roast, roasted with kosher salt, thyme, and freshly cracked mixed peppercorns)
3 T coconut oil
2 T butter
one each red and sweet onion, thinly sliced
raw babycut carrots
water sufficient
Tips
Chilled bone broth should have a gelatinous consistency, like thin Jell-O. Otherwise it's just stock.
NOTE - the nutritional info includes the veggies - the finished product here is JUST the broth (no veg or meat)
Directions
Cut ribs from roast, leaving about 1/2 " meat
Slice onions thinly and saute until slightly caramelized in coconut oil, leftover beef fat trim, and butter
Add rib bones, carrots, and sufficient water to cover
Bring to gentle boil, then reduce and simmer 1-2 hours, checking fluid level occasionally
Strain and chill to remove excess fat
Should make about 8 half-cup servings
