    1lb. of Lamb Spare Ribs
    5 cloves garlic minced
    a palm full of thyme
    a dash of salt
    a few cranks of black pepper
    tsp of evoo


These need to cook slow and low to cook off the layer of fat on the top of the rib.


Lay ribs in single layer in crockpot
Throw in all ingredients
Cook on high for 1-2 hours then reduce to low for the rest of the day.
