Ingredients

2 full chicken breasts (500g total)
1 egg
1/3 cup bread crumbs
4 servings of whole wheat spaghetti (2 cups cooked)
1 cup jarred tomato sauce
1/3 cup shredded Romano cheese
herbs and spices as you like (I use nutmeg, oregano, black pepper and a little sea salt)
Tips
The chicken can be breaded up to one day ahead to save time as well as the pasta. Be sure to toss the pasta in sauce as well so it will not stick.
Directions
1) Begin by pre-heating the oven to 425 degrees. Have a non-stick cookie sheet ready and set aside for the chicken. Prepare a pot of water for the pasts, to be prepared using the package directions while the chicken is cooking to save time.
2) Slice chicken breasts length-wise. Cover each piece using plastic film and flatten using kitchen mallet or large glass, until each piece is 1/2'' thick.
3) Beat the egg in a medium, flat bowl and coat each piece of chicken.
4) Place breadcrumbs and any desired herbs and spices in a second bowl. Mix well. Coat each piece of chicken completely with crumbs. Place the chicken on the cookie sheet and allow to settle (about 5 minutes). This will help ensure that the breading will stay on the chicken.
5) Place pasta in boiling water and place chicken in the oven. Cook the chicken for about 9 minutes on each side, turning once. The pasta should be done cooking while the chicken is in the oven. Drain and set aside.
6) Once the chicken has cooked fully, remove from oven and pre-heat the oven's broiler.
7) Spread one tablespoon of sauce on each piece of chicken, then sprinkle the shredded cheese equally between the four pieces. Place under broiler for 1-2 minutes, watching carefully that the cheese bubbles, but does not burn.
8) Toss the pasta in the remaining sauce. Serve with the chicken and any steamed veggies as a side to complete the meal.
