Number of Servings: 1

Ingredients

    Dry ingredients:
    1/4 c almond flour
    1/2 tsp baking flour
    1 tsp cinnamon
    1-2 packets Splenda

    1 large egg
    1 oz cream cheese

Directions


Mix dry ingredients in a coffee mug.

Stir egg with softened cream cheese.
Combine all in coffee mug and
microwave for 1 min.

Enjoy with sugar free preserves
Can substitute flax meal for almond flour
Can substitute tsp butter for cream cheese (drier)

    I was very skeptical, but I just love this! I've been "Low Carb"ing it for two months now and I was getting sick and tired of eggs for breakfast. This is quick and absolutely delicious! - 9/21/09

    I substituted the cream cheese with an ounce of heavy whipping cream, I also omitted the cinnamon and added some sugar free chocolate chips. I have used this recipe and think it is wonderful and quick. I also made it and used it as a base for strawberry shortcake. I would recommend this recipe 100% - 7/26/09

    My attempts have been good but a little tough. I used soy flour because that's what I have but honestly they are very filling and even my 11 yr old daughter likes them and it's easy enough for her to make. She substitutes milk or cream for the cream cheese but i like the cream cheese better. - 4/5/11
