Ingredients

1 Tbsp olive oil
1/2 cup onions - diced
4 cups water or low sodium vegetable broth
1 can 14.5 ounce diced tomatoes
1 can 15 ounce black beans rinse and drain
1 can 15 ounce pinto beans rinse drain and mash
1 can 15 ounce corn drain
1 1/2 cooked brown rice
1 Tbsp Taco Seasoning (see recipe)
1 tsp salt
1/8 tsp pepper
Tips
serve with tortilla chips not calculated in nutrition.
Directions
Heat olive oil in large sauce pan over med heat.
Cook onions till soft and translucent.
Add water or broth, tomatoes, black beans, pinto beans, corn and rice. Also add the Taco Seasoning , salt and pepper.
Heat to boiling.
Reduce heat and continue to simmer on low heat for 30 minutes.
Serving Size: makes 8 - 1 cup servings
