Ingredients

1 lb. beef round, sliced thinly
    1/2 c. all-purpose flour
    2 tbsp. oil, divided
    1 c. onion, chopped
    1 c. mushrooms, sliced
    2 tsp. garlic, minced
    1 c. red wine
    2 c. chicken broth
1 c. sour cream, fat free

Directions

Thinly slice the beef into 1 inch long pieces. If the beef is slightly frozen, it is easier to slice. Add flour to a zip lock bag. Add salt and pepper to taste. Add the slices of beef. Toss the beef with the flour mixture. Add 1 Tbsp. oil to hot pan. Add half of beef. Make sure the beef is coated with a light dusting of flour. Brown beef. Remove. Add remaining oil and rest of beef. Brown beef. Remove from pan. Add onion and mushrooms. Saute until well cooked. Add garlic and saute for 30 seconds. Add wine and cook until liquid reduced by half. Add chicken broth. Bring to a boil. Add cooked beef. Bring to a boil. Reduce heat and simmer covered for 15 minutes. Remove lid, add fat free sour cream and simmer for 10 minutes.

Makes six 1 cup servings.

This recipe does not include any pasta. I served it with wheat rotini pasta. Traditionally it is served with egg noodles.

This was very good. I used egg noodles. Since I was taking it to someone's house, I added the cooked noodles instead of dishing out separately. I added the sour cream at the last. My mistake was adding too many noodles. Everyone liked it anyway. - 12/22/08
