Ingredients

1 lb boned chicken thighs
thyme leaves to taste
cayenne pepper to taste
8 cups coleslaw mix
2 cups snap peas
1/2 cup dried cranberries (craisins)
1/2 cup chopped onion
1/2 cup walnuts
"dressing ingredients"
1/4 teaspoon cayenne
1/2 teaspoon dried thyme
4 Tablespoons grated fresh ginger
4 Tablespoons rice wine vinegar
1 Tablespoon olive oil (or oil of preference)
2 Tablespoons sesame oil
3 Tablespoons soy sauce
Directions
Sprikle both sides of chicken thighs with thyme leaves and cayenne pepper. Spray non-stick skillet and cook chicken about 6-7 minutes each side or until browned well. Turn heat to warm and cover with lid until ready to serve.
Mix cayenne pepper, sugar, thyme, vinegar, dry mustard, grated ginger, olive oil, sesame oil, and soy sauce in a small bowl and whisk ingredients together. In large bowl mix coleslaw mix, onions, snap peas, cranberries and walnuts. Pour dressing over and mix until well distributed.
Serve coleslaw with warm chicken thighs over top.
