Ingredients

    1 tsp butter 1.5 tsp oil
    1 med onion diced
    peel from 1 orange( plus 2 tbsp juice)
    1 tbs minced ginger root
    1 cup dry red lentils
    5 cups carrots diced
    900 ml(4 cups) chicken broth
    1/4 cup white wine
    1/2 tsp salt, 1/4 tsp pepper, pinch of nutmeg and cloves
    1 can low fat evapourated milk

Tips

I use a mixture of butter and oil to achieve max taste and to minimize burning butter. I use a pressure cooker


Directions

saute onions 5 min til golden add orange peel, ginger, carrots lentil and seasonings saute 1 min add broth and wine. Bring to boil and cook until carrots and lentils done. 15 minutes in pressure cooker about 30 minutes on stove top depending on type of lentils used . using blender or food processer process til smooth in batches if necessary.Blend in evapourated milk. adjust seasonings
