Ingredients

    8 cups chicken broth1
    2.25 cups dried green split peas
    1 cup chopped red potatoes (about 3 potatoes)
    1 cup chopped carrots (3-4 carrots)
    1 finely chopped yellow onion
    4 cloves minced garlic
    1 tsp salt
    1 tbsp butter
    3 tbsp olive oil
    1 tsp oregeno
    1 tsp black pepper
    1/4 cup grated parmesan (optional)

Directions

saute onion and garlic in oil and butter with oregano, salt, and pepper until onions are translucent. add all other ingredients and simmer for approx an hour and 20 minutes. use immersion blender if smooth texture is desired. stir in parm at the end if desired.
