Ingredients

Egg, fresh, 2 large
*ARROWHEAD MILLS Organic Whole Grain Oat Flour, 1.5 cup
*Flour, white, .5 cup
Fage - 0%, 6 oz
Applesauce, unsweetened, 1 cup
Apples, fresh, 2 cup, quartered or chopped
Pears, fresh, 2 cup slices
Ginger Root, 3 tsp
Brown Sugar, 1 cup, unpacked
Granulated Sugar, .5 cup
*Earth Balance Natural Buttery Spread, 2 tbsp
Baking Soda, 1 tsp
Vanilla Extract, 1 tsp
Cinnamon, ground, 1 tbsp
*Lemon Juice, 1 lemon yields
Oats, .5 cup
Walnuts, .5 cup, chopped
Tips
Cut fruit small! You can leave the skins on if you like!
Directions
Chop apples and pears into cubes, sprinkle with lemon juice. Grate ginger and add to apples. Mix thoroughly and set aside.
Combine flour, salt, baking soda, oats, and cinnamon and set aside.
In a separate bowl, combine eggs, applesauce, yogurt, vanilla and sugar and beat until creamy. Melt earth balance and slowly beat it into the mixture.
Add flour mixture to egg mixture until thoroughly combined. Fold in fruit mixture. The consistency should be very thick.
Add to greased and floured bundt pan. Make a trench around the middle and add crumble topping (optional): a small mixture of rolled oats, earth balance, brown sugar and nuts.
Bake at 350 for 60 minutes or until knife comes out clean.
