Number of Servings: 45

Ingredients

    40 Italian Tomatoes, red, ripe, raw, year round average,
    3 c. Celery, raw, diced
    2 c. Onions, raw, chopped
    1 c. Green Peppers (bell peppers), chopped
    1/4 c. Salt
    2 c. Granulated Sugar
    1/4 c. Brown Sugar, packed
    1 1/2 tsp. Pepper, black
    1 1/2 tsp. Pickling spice, Mccormick
    1 c. Cider Vinegar

Directions

Fills about 3 quart canning jars for use throughout the year! (about 15 servings per jar = approx 2 oz each)
Prepare Canning jars and lids per packaging instructions
Can put celery, pepper, and onion through Food processor.
Combine tomatoes, onion, peppers, celery and salt; let stand overnite to draw out excess fluids;
Drain in colander but do not press; place vegetables and rest of ingredients in kettle; Tie spices in cloth bag; bring to boil and boil about 15-20 min;

Ladle heated sauce into clean canning jars to 1" from top; place lid and ring then place in water bath for 10 min.
Remove from water and let cool to room temperature to seal the jar. label and store in cool, dark area until used
