Ingredients

    3 tbsp of liquid egg whites
    2 small cherry/grape tomatoes diced
    1/4 cup of fresh spinach, chopped
    1/8 cup of light shredded cheese (your choice)
    1/8 cup of your favorite salsa
    salt and pepper to taste

Directions

Chop and dice rewashed and dried tomatoes and spinach. In a lightly greased skillet set to medium high, pour in the liquid egg whites and begin cooking. Drop in the tomatoes and spinach before egg is completely cooked and sprinkle cheese on top. Salt and pepper lightly for taste. Now fold half of omelet over and cook on each side. Be careful not to brown or overcook. When done, transfer to plate and top with your favorite salsa.
