"Dear Cave-Ladies and Gents, here I present you the most fuss-free Paleo Coconut Bread ever.I have tested many recipes and tried and tried until I found the perfect mixture for a bread for a full on flavor, just enough moisture and crumbliness, suited for sweet and savory palate too.
This is my absolutely go-to recipe, because:
- it has only a handful of ingredients,
- the ingredients are cheap and easy to find,
- needs only 5 min to prepare
and everyone LOVES it, so it WILL disappear in no time too.
It is good in itself, with homemade marmalade, nut butter, Nutella, or

Ingredients

6 eggs
1 tsp vanilla extract / inside of 1 vanilla bean
3 tbs honey
3 cups dried, shredded coconut
1 tsp baking powder
1 tsp coconut oil (for oiling the pan)
Tips
If you want to make it extra sugar-free, just leave out the honey. That way, you can spread savory things on it too.
Directions
For a 10” = 26cm long bread pan
Preheat your oven to 140°C / 284°F.
Beat the eggs with the vanilla and honey with an electric mixer.
Place the coconut flakes in food processor or coffee grinder and grind it until it’s flour like (max 1 min or it will become coconut butter). (In case you do not have a food processor or do not want to waste time with the coffee grinder, you can skip this step - I have done it many times, the bread will be perfect without it too. )
Mix the coconut flakes (ground or not) with the baking powder and add to the egg mixture.
Oil your pan with the coconut oil (if it is nonstick) or use parchment paper (if it’s not nonstick).
Bake your bread on the preheated temperature until the toothpick comes out clean (for about 40 min.).
It is bread just in itself, or with homemade jam/marmalade, nut butter spreads, Nutella or whatever you fancy.
