Ingredients

    1 Can Tuna in water - Crumbled
    1 Can Hearts of Palm - Drained (not marinated)
    3 oz Kalamata Olives pitted & chopped
    1 Stalk Celery chopped
    3 Tbsp Onion chopped (preferably Red/Bermuda)
    1 Large Lemon - juice of 1 or 2 depending on sized/taste
    3 Tbsp Olive oil
    1 Hard boiled egg - chopped
    Season with Salt/Pepper to taste
    8 Slices Italian bread - Toasted

Directions

Combine all ingrediants. Toast bread and top with tuna mixture. Lightly drizzle olive oil on top of tuna prior to serving. * Original recipe calls for entire loaf of italian bread split and bottom half scooped out some, then both toasted. Put all tuna mixture in bottom half, then top and cut in 2-3 inch slices to serve. This recipe is a lighter version using pre-sliced italian bread. This makes 4 sandwiches or if you could omit the bread and serve atop a green salad & crackers.
