Introduction

Ingredients

1 Lb. Ground pork cooked and drained well
2 C. Fresh yellow onion chopped well
12 10" flour tortillas
1 29 ounce can green chili enchilada sauce
Tips
I occasionally use a can of the government meat, Just drain off the fat and preservative liquid. Gently rinse fat from meat.
Another quick way to make these burritos is to yse left over pork roast that has been trimmed of all fat and then chopped.
Directions
If using fresh pork cook in a skillet until done. Drain off all grease and meat drippings well. When the meat has browned put it into a bowl.
Heat tortillas for about 50 seconds in the microwave: this renders the tortillas easier to work with and they won't tear when you roll them.
Put a spoon full of meat and then as much chopped onion as you like.
Roll up each filed tortilla and place in your baking pan. When all tortillas have been filled, rolled and out in the baking pan pour the green chili sauce over the tops of the burritos and sprinkle the remaining chopped onion over the burritos and sauce.
Place the pan of burritos in your oven at 350 degrees and let bake until the sauce is hot and bubbly.
