Ingredients

    4 oz Bufalo Mozzarella, diced
    2 cups tomatoes, finely chopped
    1 cup white beans, drained and rinsed
    2 cloves garlic, crushed/minced
    1/2 tbsp Extra Virgin Olive Oil (the best you can afford)
    1/2 Cup basil leaves, chopped

Directions

Combine all ingredients. Allow flavors to marinate at least one hour, preferably overnight. You'll want to bring the salad back to room temperature if you decide to refrigerate, to allow the flavor of the tomatoes to come out.
