Ingredients

    8 leaves Boston Lettuce
    1 medium carrot
    1 green onion
    1/2 red pepper
    1/4 english cucumber
    fresh mint
    1/2 left-over cooked chicken breast
    6 med sheets of rice paper

Tips

Serve with peanut dipping sauce.


Directions

Cut left over chicken, carrot, green onion, cucumber and green onion into thin strips. Rip up several mint leaves. Soak rice paper for 10 seconds and then load starting with lettuce and some of each ingredient.
Wrap tightly.
