Ingredients

    Ingredients:

    4 slices ham

    1 tablespoon pesto

    1/3 cup diced bell pepper

    1/3 cup diced mushrooms (crimini)

    1 cup liquid egg whites (or 4 eggs)

    1 teaspoon oregano

    1 teaspoon soy sauce

    1/8 teaspoon salt

    1/8 teaspoon ground black pepper

    1/4 teaspoon chili garlic sauce (optional if you like spicy)

    1/4 cup grated swiss (to taste)


Directions

1. Preheat oven to 400 degrees. Spray 4 muffin tin cups w/cooking oil

2. Spread pesto on the center portion of each slice of ham (a little less than 1 teaspoon per slice). Line 4 individual muffin cups w/ham.

3. Evenly divide bell pepper and mushrooms into ham cups

4. In a small mixing bowl (or a liquid measuring cup works well because it has a pour spout) combine remaining ingredients besides cheese. Pour mixture evenly into ham cups and top with grated swiss.

6. Bake for 18-20 minutes or until egg whites are firm yet fluffy, enjoy!
