Ingredients

Onions, 1 cup, chopped
Flour, .5 cup
Evaporated nonfat milk, 1-1/4 cup
Parmesan Cheese, shredded or grated, .5 cup
Pepper, red or cayenne, 2 tsp
Mrs. Dash Garlic & Herb Seasoning, 2 tsp
Baking Powder, 1 tsp
Spinach, fresh, 10 oz package
Mushrooms, sliced, 1 cup
Egg, fresh, 5 large
Nutmeg, ground, 1 tsp
Kraft Italian Five Cheese Blend, 1 cup
Directions
Preheat oven to 400 degrees.
Sauté the onions in a pan with cooking spray until translucent. Add sliced mushrooms until slightly cooked and reduced in size - about 5 minutes. Add the spinach and warm until just wilted. Allow to cool.
In a bowl mix the eggs, flour, baking powder, spices, and cheese until completely mixed and smooth. Once mixed, add the cooled vegetables and mix well. Pour into a lightly buttered, oiled, or sprayed 10 inch pie, tart, or casserole dish. Bake for 35 minutes.
Cool 5 to 10 minutes before serving.
