Introduction

Ingredients

    2 blocks extra firm tofu, drained, cut into 1" cubes
    2 tbsp EVOO
    2 packages baby bella mushrooms (thinly sliced)
    10 oz. shredded carrots
    1/2 red onion (chopped)
    1/2 cup nutritional yeast
    Juice of 1/2 lemon
    2 tsp cumin
    1 tsp turmeric
    2 tsp thyme
    2 tsp paprika
    1 tbsp garlic powder
    1 tsp salt


Directions

Heat oil in large skillet, and add onion. Simmer for 3 minutes, then add mushrooms. Simmer 5 more minutes until soft. Add spice blend and stir for about 15 seconds, then add 1/4 cup water to deglaze the pan. Add tofu and carrots, mixing to coat with spices. Cook for about 15 minutes. Take off heat and add lemon juice and nutritional yeast. Mix well to coat tofu and veggies.

Serving Size: 2 cups (makes approx. 5 servings)
