Ingredients

    1 bay leaf
    2 tbsp Herbes de Provence
    3/5 link of Kielbasa (any kind you like) sliced thin
    1/2 package (apprx) of 1 lb 15 bean soup mix
    1 onion, chopped
    2 cloves garlic, minced
    15 baby carrots, cut in half
    3 stalks of celery, diced
    1 to 2 cubes of preferred beef boullion cube
    Water (as much as needed to come to within 1 inch of lid of crock pot)

Tips

I don't add any additional salt to cook this, there is enough in the kielbasa. When it's cooked, remove the bay leaf and serve. Let people add hot sauce, salt, pepper or anything else as desired to their individual serving! Goes well with corn bread!


Directions

Pick thru bean mix to get stones out, soak beans overnight in cold water. Drain, rinse, put into crock pot with the rest of the ingredients. Cook on high for 4 hours or on low for 8.
