Introduction

I first had this dish at a local "Spirit Festival" and it was prepared to accomodate vegans. (I was not vegan at the time) It is slighly sweet and filling. Number of Servings: 4

Ingredients

    Small can of peas
    1/4 cup golden raisins
    1 bag boil-in-the-bag white rice
    1/4 - 1/2 cup unsalted peanuts (raw, roasted, or boiled)

    Optional:
    1-2 tbsp honey
    1-2 tbsp butter / butter substitute
    dash of cardamom or cinnamon

Directions

Prepare a pot of boiling water. Place bag of rice, peas (may drain or not, your choice), peanuts, and raisins in the water and cook according to rice box instructions.
When done, remove bag of rice and set in clean sink to drain. Pour the rest of the mixture from the pot through a collandar.
Carefully open the bag of rice and pour into a bowl or back into the emptied pot. Stir in any optional ingredients then add drained mixture back into the rice & stir.
(The raisins will plump slightly during cooking.)
Eat while hot.
