Ingredients

4 Chicken Thighs - about a pound
2.5 liters water - about 10 cups
1/2 c onion, chopped
1/2 c celery, chopped
1/2 c carrot, chopped
1 c potato, diced
1 star anise seed pod
1 tbsp parsley
4 c homemade (or unenriched) egg noodles
Tips
Often, we'll substitute spaetzle, cooked right in the broth, for the noodles, so it's like homemade chicken 'n dumpling soup.
Directions
Bring 2 liters of water and chicken thighs to boil, lower heat, cover and simmer for at least 1 hour. Add onion, celery, carrots, star anise seed pod, and parsley. Simmer for another hour, and taste. If it tastes strong enough, add a half liter of water (approx. 2 cups) and the diced potatoes.
Cook the noodles separately, drain and rinse well in cold water. Serve into bowls. The chilled noodles will cool down the soup as you serve it.
When the potatoes have cooked through, it's ready to eat!
